Ingredients of Kwey teow

  1. Prepare 1 kg of fresh rice noodles.
  2. You need 250 g of thinly sliced chicken thigh/brest.
  3. It's 100 g of squid rings.
  4. Prepare 50-100 g of pealed prawns.
  5. You need 2 Tbs of sambal olek (Asian chilli paste).
  6. It's 3 Tbs of light soy sauce.
  7. It's 3-4 cloves of garlic (chopped).
  8. Prepare 2 of spring onion(finely sliced white seperated from green).
  9. You need 50 g of bean sprouts.
  10. It's 1/2 of a lemon.
  11. You need 1-2 tsp of sesame oil.
  12. It's 2 Tbs of Chinese cooking wine.
  13. Prepare 2 of eggs beaten till frothy.
  14. You need of salt n pepper for eggs.
  15. Prepare 2 Tbs of olive oil.
  16. It's 3-4 of champignons sliced.

Kwey teow step by step

  1. Heat oil in wok or deep saucepan add garlic, white part of spring onion and fry for 2 minutes..
  2. Add sambal olek fry for 2 minutes..
  3. Add chicken fry till just cooked.
  4. Move chicken mix to 1 side of pan away from heat, add beaten eggs and scramble and season with salt and pepper till cooked then combine altogether with chicken mix..
  5. Add sliced mushrooms, stir fry for 1 minute.
  6. Add squid and prawns stir in with mix till just cooked..
  7. Add rice noodles and stir till the noodles fully coated with mix.
  8. Add soy sauce, sesame oil and Chinese cooking wine and stir for 1-2 minutes..
  9. Add green part of spring onion and bean sprouts stir for 1- 2 minutes​. And you're​ done..
